This tomato sauce is similar to a bolognese sauce (or a spaghetti sauce) without being one. My teens don’t eat so many vegetables (argh!). So this sauce is a good way to make them consume many different ones at once.
I make this recipe with my Instant Pot, but you can very easily make it in a jumper. Obviously, this very versatile sauce perfectly accompanies pasta, but it is also delicious with rice, quinoa or even with green beans.

Ingredients
  

  • 1 onion
  • 3 cloves garlic
  • 1 red pepper
  • 1 zucchini
  • 2 carrots
  • button mushrooms
  • oil
  • 500 g of minced meat note: I use chicken but take what you want
  • 2 cups Tomato coulis
  • 1 teaspoon Smoked paprika
  • teaspoon Cinnamon powder
  • teaspoon Nutmeg powder
  • Vegetable broth powder or cubes
  • 1 tablespoon Shiromiso
  • salt
  • pepper
  • water

Instructions
 

  • Peel and cut the onion, garlic, pepper and diced mushrooms. Peel and grate the carrots.
  • In the tank of the Instant Pot, add a little oil. Select the “Skipped” function.
  • Add the onion in order to make it sweat. When it becomes transparent, add the rest of the vegetables. Blow up for a few minutes.
  • Add the minced meat. Mix well in order to separate it into small pieces.
  • Add the spices and tomato paste. Mix well so that vegetables and meat soak it up. It is better to put less at this stage to be able to adjust if necessary once the sauce is finished.
  • Add tomato sauce and vegetable broth (powdered or cubed) with a little water. Note: be careful, cooking under pressure will add water during cooking, do not put too much.
  • Press "Cancel" before choosing the "Meat stew" option which will normally set the Instant Pot automatic in pressure cooking for 30 or 35 minutes. Make sure that the valve is turned correctly on "Seal".
  • Once finished, let the pressure escape naturally for 10 minutes before turning the valve to evacuate the rest of the steam.
  • Be careful when opening your Instant Pot, the steam is burning 😉
  • In a small bowl, put a little liquid and add the miso to it: with a small whisk or fork, dilute the miso in the sauce before putting everything back in the tank.
  • Mix well. Taste in order to adjust the seasoning as needed.

Notes

Serve on your choice of starch or on your green beans. I like adding hot sauce and scallions when serving.
